Perfect Pumpkin Homous.

1-2 cloves roasted garlic (we popped in with the pumpkin)

2 tablespoons olive oil

1 can chickpeas, drained and rinsed

1 pumpkin insides & pulp from carving

1 tablespoon maple syrup or honey

Pinch of cumin 

salt to taste




Roast the garlic & pumpkin in the olive oil on low heat until soft (35mins)

Puree all ingredients in a blender or food processor until smooth. Add more oil or water as needed. 

Serve with breadsticks, warm naan, crackers, carrots, toast, roasted vegetables, pita bread, and/or anything in the world.
